Patri of the blog, Asi Son Los Cosas, was our September 2012 Daring Bakers’ hostess and she decided to tempt us with one of her family’s favorite recipes for Empanadas! We were given two dough recipes to choose from and encouraged to fill our Empanadas as creatively as we wished! This is my first challenge.
for the dough I used this recipe

750 gr bread flour
2 cups lukewarm water
15 gr dry yeast
2 teaspoons of salt
4 tablespoon of oil
1 egg (for egg wash)

for the filling
3 tablespoons olive oil
1 big chopped onion
1 large diced carrot
1 large red pepper
150 gr canned sweet corn
350 gr minced meat
2 handfull od gratted parmesan
fresh thyme and majoran
Sift the flour in the bowl and make a well in the middle add dry yeast and salt.Then add water mixing it with your fingers.until all the flour has been incorporated. Work your dough on the table at lest 10 minutes.
Clean and oil a big bowl, and place your dough in it. Let it rest for 40 minutes.
Chop the onion. Heat the oil in the pan, then add onion. Add diced carrot and pepper, then add meat. Adjust with salt and pepper and add corn. Cook until done, then add fresh herbs. Let it cool. Just before stuffing your empanada, mix in grated cheese.
Preheat your oven at 180. Divide the dough in two parts and grease the baking pan . Spread one part then cover the base and the sides of the pan with it. Place the cold filling and cover it with the other part. Join bottom and top dough with wet fingers. Decorate it with the rest of the dough. I made a "crown" all around and the holls are hidden there. Bake it in the oven at last 45 minutes.

Asi son las cosas zadala nam je zadatak da napravimo Empanadu iz Galicije. Prilično je jednostavno. Nadjev koji može biti slan ili sladak u tijestu za kruh. Recept za tijesto je bilo zadano a nadjev smo mogli sami osmisliti, ja sam se odlučila za slanu varijantu.
za tijesto
750 gr glatkog brašna
15 gr suhog kvasca
2 šalice mlake vode
2 žličice soli
4 žlice ulja
1 jaje (za premazivanje)

za nadjev
3 žlice ulja
1 velika nasjeckana kapula
1 velika nasjeckana mrkva
1 velika crvena paprika
150 gr kukuruza šećerca
350 gr mljevene junetine
2 šake ribanog parmezana
majčina dušica i mažuran
U zdjelu staviti prosijano brašno, dodati soli i kvasac pa uz pomoć mlake vode umjesiti tijesto.Mjesiti tijesto 10tak minuta pa pustiti da se diže. Za nadjev pripremiti povrće, oprati ga i nasjeckati. Zagrijati ulje pa dodati nasjeckani luk, mrkvicu i papriku, kratko pržiti i nakon toga dodati meso. Začiniti solju i paprom i dodati kukuruz. Dodati začinsko bilje. Ostaviti da se ohladi. U hladno umješati ribani parmezan.
Zagrijati pećnicu na 180 stupnjeva. Tijesto podjeliti na dva dijela. Prvi dio razvaljati pa ga utisnuti u kalup, pokriti i dno i stranice. Preko tijesta rasporediti nadjev pa prekriti s drugim dijelom. Dobro spojiti gornje i donje tijesto.Od viška tijesta izraditi ukrase. Napraviti nekoliko rupica da može izlaziti para. Premazati umućenim žumanjkom.Peći na 180 stupnjeva 45 minuta.
